Take them out the night before and tray them up for the morning bake. You can cover them in plastic so they don’t dry out! They will defrost and proof over night in the fridge so they are ready to go first thing in the morning. Take them out first thing in the morning and let them come to room temp whilst the oven heats up to 170-180c. Give them about an hour. Then egg wash and bake for 20 - 25 mins at 180c
